I usually do a rack of pork around the holidays and this year was no exception
The rack
Trimmed and Frenched
Brined. Yes, yes I know it was enhanced already so cut down on the salt in the brine
Rubbed (You guys need to give the Loot N Booty rubs a try)
On the kamado
In the meantime I made creamy mashed taters with aged Gruyere
Served with gravy, homemade cranberry sauce and salad on the side
