Hi All,
Newbie to BBQ Smoking, I decided I wanted to make my own Pastrami, so I went out and bought a smoker (well sorta anyway, I went to eBay and I bought a Pro Q Amigo...so I didn't go out and I didn't get much of a smoker)...then I found your little community and decided I could build a better smoker (for what I'm willing to spend) and started collecting bits for a UDS (currently in the works).
Meanwhile I have the Amigo, so I decided to give it a go to see how it does. The problem with the Amigo for those that don't know is that it's an Open Bottom design with no ability to control airflow and therefore temperature. They overcome this design flaw by having a huge (almost 2 gallon) water pan inside this tiny (16" dia) thing. the stock unit also places the water pan about 2" from the charcoal pan, so there's no way to maintain the fire once it's lit. The nice thing about Pro Q's Smokers is that they sell expansion rings and I bought one when I bought the smoker, this let me raise the water pan (sacrificing the third grilling rack) so I could maintain the fire. Which was a good thing too... I had to add lump twice, because it runs wide open relying on the large water pan to keep temps in the smoking range.
The results however.....Not Bad :thumb:!!!
My and R2D2's (as christened by my wife) first attempt at smoking...Teriyaki Chicken thighs turned out great (it's a crime that there's no smell plug-in).
