• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Quick responce needed. HELP

It's pouring rain here brother's. Last night I had prepared two 8# boston butts and 2- 2# Italain stuffed Fatty's. Had planned to fire the offset up first thing this morning. No cover to keep the rain off. Have already felt the wifes anger last night with the amount of meat I prepared to smoke today. Quote "Are you cooking for a farking army"end quote. My stupid responce was of course"Yeah, It doesn't hurt to be prepared if one stops by". Trouble is I buy fresh meats to cook, I know I could just throw everthing in the freezer and wait another day. But this morning she woke up to the sound of rain and a little smile appeared on her face. I took that has a challenge. Sunday is the only day I have that is mine. I have a 400# offset and I also have a covered porch, it's just 6' up out of reach. How diffcult would it be to maintain heat in the rain, I'm thinking I should just let her win this one, It's hurts though, kinda down in my gut.:sad: :sad: :sad:

I think it will handle it... I've used my Pitts & Spitts offset in the rain and it's probably similar in size (I estimate 450+ lbs). Rain's not the worst thing in the world.... What's the temp outside ??

If you've got a good supply of logs, you might need to feed it a bit heavier but you should be able to manage through it...On the other hand, if this is gonna make her miserable, then save it for next Sunday....
 
You need some sort of cover......a tarp up on poles, or a popup, which would be better....the rain will probably difuse some of the heat if out in the open, plus you'll have issues keeping your fuel dry.
Sorry, I can't think of much else on the fly here.....
 
A tarp and 4 poles, sticks or brooms and make a tent.
 
On another thought....IF......you can get 3-4 hours smoke in the pork butts, you can always finish in the oven...8# butts will take a minimum of 8 hours @ 250*...you'll be a wet mess by then for sure...
 
I could run out to Wal mart and get a cheap cover; however I am already in dutch over the amount of meat I bought. I have an electric water smoker. I was thinking of just doing the Fatty's and breaking down and freezing the butts for another day. What you think?
 
Go by a WSM... dont ever let em win.... this will show her who is boss. it should handle it though.. i have used mine in pouring rain... with no cover.. just uses a little more fuel depending on the temp out side.
 
Depending on the temperature outside, you may have a battle on your hands. Be prepared to feed the wood to maintain optimum temps.

Perhaps you should consider a insulated smoker in your next life if your wife kills you.

Plus get a foodsaver and explain to her that you are cooking for the entire week.
 
I'd go for it! Just think of the experience you will gain from this difficult cook! As mentioned above you can always get some smoke in the meat and finish in the oven! Sometimes women just complain to be complainin!
 
Well, I fired up the water smoker, I havent used it since I bought the off set. Burning the racks so I can clean up a little, I don't know what last years que would tast like, so cleaning first. I have two racks for this thing, looks like it will hold one of the butts on one and the two Fattys on the other. Which rack do ya'll think would be best for the fattys? upper or lower. Lower is only 2 inches above the water pan. This is a char-broil smoker and it seals pretty tight.
 
id stuck the fatties on top for now just because they will be done first. you can allways switch em afterwards.
 
Yea, fatties on top, butts on bottom. Put one of the butts up on the top rack after the fatties come off.

Even if you don't put any meat in her you gotta fire it up....it's for your

You may want to pick up a tarp or popup in the near future and stash it away for the next time. That way, next time she hassles you, just set it, and tell her you've got it handled.
 
Thanks Brothers, Meat and Fatty's are on the smoker. I have taken pictures during the prep and I'm going to continue for the cook and the finshed product. I figured out how to download from camera now I have to figure how to post on a new thread from there when ready. I have to run out and fix a heater so I want be able to check back for about an hour or so.

She already knows who the boss is. I just refuse to acccept it. That's the main reason I stay in so much trouble around here. STUBBORN:lol: :lol: :lol: :lol: :lol:
