• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I love my 270 smoker! "Go West, Young Man, Go West!"

I have a question, how many of you are running with a water pan and how many are running dry? I have been running wet, and letting it go dry at the end of the cook to firm the bark up. I came from the stick burner world so I am just seeing what everyone else is doing.

I do the exact same thing for shorter cooks, however for longer cooks (4+ hours) I will refill and let the water evaporate.
 
Same. When doing pork butts and briskets I will refill about 4 to 5 hours in to my 8 hour or so cook.
 
I have a standard, and am looking to get another. I am not sure if the next one will be a standard or a large.
 
What size 270 you guys have?

I NEED to get me a 270 , love them

I have the Standard and its a perfect size for what I do. But love the look of the new colors on the Sumo. Might get my dad a mighty mini as well.
