• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Q'ing healthy...

I'm trying to cook (Q) a little more healthy during the off season. Does anyone have any good ideas?
Right now I'm doing a bone-in turkey breast (brined) seared then I'll braise on the grill.

Try using meat as an ingredient instead of gorging on it. Tacos are a great example. Grill some corn tortillas, put a ounce or 2 of pulled pork on it, sprinkle with shredded cheese, then tear off a handful of lettuce and top with some tomato wedges and salsa or hot sauce.

Whole wheat grilled pizza is also great.

Last weekend I cooked some acorn squash in my barrel that was awesome. Split in half, scoop out seeds, add a tablespoon of molasses and cover to with foil. I ended up eating them rind and all. How's that for fiber?
 
I do a WHOLE lot of boneless skinless breasts. Thye are very versatile and can be cooked about any way you want, and they eat well cold also. I grill them and chill the leftovers to save for salads, etc. Since we are a family of 2 adults and a 2 year old, I cook two to eat and the other to chill for my boy, or for later. I have also been cutting the portion size. Some companies sell big breastststs, so I split them into extra pieces, which cuts down on the amount I eat.

I do pork tenderloins more than other pork cuts, so the fat content is cut way back.

Fish and skrimp are always healthy choices. :cool:

For meatless nights, we do salads and baked potatoes.
 
I thought any food that came out of a smoker was completely void of calories. At least that's what I tell myself.
 
For me, being pro Atkins (lost 140lbs) most everything I do on the smoker is healthy.(low carb)
