• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I decided to treat the folks that work for me to a good 'ole BBQ for lunch. Got up at 5 AM to get it all ready. I have, even as I type this, two 6 lb racks of pork spares, one brisket tip, and two 5-6 lb whole chickens. Thinking it all should be done in 6-7 hours--right?!?

Mr. k, Sounds like fun. You should be good to go on the ribs and birds. The brisket, well that kinda depends on the weight, thickness and fat content. Best of luck, I'm sure the folks you work with will appreciate the good eats, good Q trumps dinner bucket fare damn near every time, unless ya got leftover Q in your bucket :wink: :D .

I used the 3-2-1 method on everything--with mods. Took the ribs out after 3-2 and put in cooler, whole chickens came out at about 3-2 1/2 than into the cooler. Brisket went 3-2 3/4 then into the cooler.

I waited till the internal temps hit 180* on the chisken and 190* with the brisket, that's why the times are different.

When it's a said and done, the ribs will have been in the cooler for 1 1/2 hrs, the chickens for 1 hour and the brisket for about 45 min.

Holy smoke, it sure is smelling good! Can't wait to dig in in a bout 25 minutes! Yea baby!
 
Wow, great BBQ! Everybody loved it, and wants me to do it once a week, or a month at least! Folks sniffing the air that don't work for me just happened to stop by the building during lunch. Coincidence? I think not!

Seems I lost sleep last night worried about this for no reason!

Mrk, glad it all worked out, having to hit a specific time always puts a little pressure on, always remember, "let the cooler be your friend" like you did today and its all a lot easier.
