Just got back from lunch at Papa Bear's BBQ on Cottage Grove Rd in Madison. (Formerly Bull's BBQ)
I ordered the Brisket sandwich ($5.00) with a side of beans ($1.60).
The brisket sandwich was a smoked corned beef brisket, therefore I had a pastrami sandwich with sauce on the side. The brisket was very tender, and it had a mild smoke flavor to it, however it was sliced with the grain and was also too salty for me. The sauce had a good spice and vinegar wang to it. The beans tasted like they were straight out of a can.
Others in my dining party ordered the brisket plate, which was the same meat as mine, and it came smothered in the aforementioned sauce. I was also able to sample the ribs and the rib tips. The ribs had a very slight smoke flavor, and also were smothered in sauce. There appeared to be no rub on the ribs. They were, however, fall off the bone tender. One of the rib tips was quite tough, and was also covered in sauce. No rub there either. Couldn't tell if they were par boiled or not.
All in all a so-so Q experience. I'd give it a 2 out of 5.
