With all this turkey talk.....Who has done pulled turkey?

I pulled the left over turkey from today, currently boiling the bones, skin, veggies, garlic and bay leaves, going to make creamed turkey over mashed potatoes and biscuits tomorrow

I will pull are chop our leftovers vac seal and use for casseroles that call for chicken, tacos, or whatever else we can think of.

I have seen it done--it's tricky though to avoid drying out.

Witts in Nashville has a surprisingly tasty pulled turkey for a BBQ chain (better than most of their stuff IMHO)--anyone have any guesses as to how they do that.

After I get to 140 I have put the turkey in an oven bag for about another hour and had pulled turkey. I have also used the oven bag on brisket with good results.

I did pulled turkey for my son's graduation party in June. I mixed the white and dark meat together.
It was pretty well received.
