• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Hi,

I was lucky enough to have some pulled pork from Kings BBQ in North Carolina. Good stuff! It was very different from what I've had here on Long Island and what I had in California (which has a surprising amount of bbq joints).

As you can imagine, it had a vinegar base, but they also included diced onions. Is that common in the region?

I was going to try to replicate it here and any suggestions would be appreciated.

I did a pulled pork for the Super Bowl and used diced onions and peppers. It was awesome.
 
That's a new one on me but onions are never a bad thing in my book.

when i make my carolina red sauce for pulled pork i use sliced onions/applecider vinager/ red pepper flakes/ and usually some sweet heat from spice wine. turns out good. I love onions though.
 
I ALWAYS add diced/sauteed vidalia onions to pulled pork. IMO, its blan without it,a nd with it, i dont need to add sauce. Almost screwed up one time and nealry added them to pulled pork entry at a contest once.

now that would have sucked.
 
Going to have to try that one PooBah next time we do pulled pork here.

I never heard of or thought about onions with pulled pork. I'll have to try some sauteed and then add the sauce and mix in with the pulled pork. Thanks
 
I'm seeing diced onions here and sauted onions here. Assume the the diced are also sauted. As an onion lover I would have to go for the raw. Are some of you saying raw and others sauted? Do you mix it into the pork, or just add to the top of the sammy?

For a KCBS contest, my guess is that would be a DQ. :confused: Anyone disagree?

Onions from a nice sweat sounds really good in pulled pork. Never thought about that. Maybe some sweet onions and diced green apple all reduced down and then added to the pork. That sounds like a winner.
 
That's why I lean toward the Mustard based sauces with Pulled Pork...Most of them have Onions in them !!
 
Favorite at our place is chopped onion and chopped cilantro mixed together! Really a good flavor...

I ran out of my new big jar of Blues Hog Tennessee Red sauce. Trying to substitute a homemade vesion. I made a basic one with Bragg's Cider Vinegar and it's OK but pretty tart. Your comment caused me to finely chop about 1/3 sweet onion and add 2t of Spicewine's 'Fire Good' hot sauce. I blended this throughly at high speed and then heated to boiling and simmmered very low. Seems better, but needs something. I added 1T of Blues Hog regular BBQ Sauce and I can really taste that distinctive flavor but in the background. Do you (or any Brethren) have suggestions to keep this close to a Tennessee red sauce but still improve it?? I do have some Sweet Heat and could add it, but want to be a bit careful at this point.

Need this for Pulled Pork on homemade bread tonight!

P.S. ... mod sauce was good (better) but still not 'there' yet. I'm considering a gross change by adding some good mustard ???

I dunno, Todd... I might have to argue the point if they said it was. I think depending on what size pieces you included that you COULD make a case for it being an ingredient in the sauce you chose to use on the pork, ya think? Maybe I'm wrong.

We are just guessing at this point, but I agree with you Jeff. I recall it specifically saying a "fine dice" in sauce is acceptable. If mixed in with the pork, they may have a tough time DQing you. again, just my recollection and opinion.
