I have a cookoff in a few weeks here in Texas and pulled pork is a category. I have never cooked pulled pork at a comp.The rules state
Pulled only ... (shredded to some)
No muscle chunks
No slices
It is ok to Sauce after cooking before you put in the tray
No pooling of sauce in tray.

Which part of the butt would you concentrate on for your pulled meat and what type of sauce would you reccomend?
 
for sauce small bottle sweet baby rays and mix that with 1/2 jar of peach jam/jelly. i also never sauce my pulled pork. not untill it is on my sammie. all i do after pulling is pour some of the liquid (from when i foil after 4 hrs of smoke) onto the pork and mix. wow it is good. good luck and keep us posted on how it went.
