• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Prime Rib on PBC

Hi!

How long do you think an 11 lb prime rib will take on a PBC?

I'm trying to plan out times for Christmas dinner. I have to transport it after cooking.

nice, i plan on making the same this weekend in my PBC, but about half the size! i want to say the vids i've watched for 6-8lbs are about 2-2.5hrs to get to 120. so i'd guess probably 2.5-3 for an 11lbs. how far do you need to transport? a half hour rest and the meat should still be nice and warm if you foil it.
 
I'd cook it at 200 for 5 hours or so,take it to 110, get in your car,
then throw it on their red-hot kettle to sear it once you get there.
Don't forget the au jus and the horseradish sauce (amazingribs.com has a great recipe)
 
I did one for the PBC specific TD earlier this year and it came it insanely good. I can't recall but I was at 1 1/2 to 2 hours of total cook time. You can probably cook, pull and put in a Styrofoam cooker, foil it lightly and transport with the lid off to avoid overcooking.

I made a paste to slather on the prime rib

Lit the basket and waited for it to run clear with the basket fully engulfed

Put on the prime rib and closed the lid

When it hit 120*IT in the mid center I took it off

Loosely foiled and let her rest for 30 mins

Sliced and served

Hands down the best prime rib I've had
