Just had a neighbor ask what I charge them for a fried turkey for Christmas. Told her I had no earthly idea. After they left got to thinking about it and thought that maybe I would tell them $25 over whatever I paid for everythng (turkey, 1/2 the oil, rub, marinade, etc.)

think that's fair ?

I smoked 14 lb birds for T-day. Charged $28 a pop. Not one flinch in the bunch.
Might go a little higher next year.
I think you're probably in line.
Besides that it's dangerous, and the oil isn't cheap.

They're $40-50 at some of the joints around here. Popeyes chicken does them as well as some wing places. All your cost is in the oil. Don't burn it, and the more you fry the lower cost per cooked bird to you.

I helped fry a bunch at a place in Memphis that sold 120 at $40 a pop.

What was the avg weight?

All around 12 pounds, though there were a couple 15 pounders. All except a hand full were injected and rubbed, then fried about 3 minutes per pound.

You have to factor in the prep on the bird too. If you are going to brine, season, inject, rub anything under the skin... The actual cooking is the easy part in my opinion.

Actually after 30 or so, I was knocking out the prep pretty fast! Didn't leave a single pop up timer in to boot!:-D The worst part was waiting for them to finish cooking so you can get more in the fryers. 9 fryers going non-stop from 5am til 5pm and only 3 major oil overflows. Not too shabby!
