• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Pretty good smoke.

4 racks of babybacks and a chuckie, hickory smoke. Results were really good. Easy peasy on a WSM...And the new Redi-Check thermo.

Good looking ribs. The more you run the WSM the better you will get.

Thanks all! I got a good laugh at myself today when I checked this thread and realized that I'd left out the most useful photo of a rib gently pulled away from the rest of the rack!

They look great!! Moist and tender too. Nice job!

That bark not only looks fine but is absolutely delicious! I used the same rub that I've used on pork for 20+ years, a very basic one including paprika, salt, cumin, brown sugar, chili powder, black pepper and cayenne pepper. Decided to make these ribs a little spicier, so just upped the cayenne content a little bit. The chuckie rub was simple SPG.

And I didn't use a slather on any of the meat. Because I forgot to do it!:tongue:

Think the next stage of my Q development needs to include trying different rubs, commercial and homemade.
