Poultry Shears for Chicken THighs

I generally just use a cleaver


but these shears would also work.

A sharp chef knife Put the blade on the bone then hit the top part of the knife or as suggested a meat cleaver

Pruning shears work well for cutting up poultry.

game shears; cut wherever you want... if you want to separate at the joint I recommend a sharp knife; long as it isn't serrated it should work

I second the OXO poultry shears. Never used them for thighs, but they make quick work spatchcocking turkeys for Thanksgiving.
