• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Portion sizes for brisket sandwiches

Gonna smoke the brisket for a fundraiser at work. Looking at doing brisket sandwiches for 100 folks with two sides. How many sandwiches (regular, not jumbo size buns) can you get per pound of brisket (chopped with sauce)?
Also, how much meat do you get from an average packer brisket? Is 50% the usual calculation?

Speaking of portions, how much potato salad, cole slaw or pinto beans would you fix for 100 folks? Assuming ice cream size scoop portions of these.
 
I usually get about 60% yield from packers - that's why I do flats for catering - I can control the costs better even if the initial cost per pound is higher. Maybe 60-70 pounds of packer brisket.

Figure 3-4 sandwiches per finished pound of meat.

Figure 1/3-1/2 cup each of the beans, slaw, and/or potato salad. Prepared stuff usually says you can get about 15 servings per 3 or 4# carton. So, 3-4 gallons of beans, 6-8 pounds or so of potato salad, 6-8 pounds of slaw - or just get prepared stuff that gives you the approximate yield!
