Were were at a local resturant the other night and had "Pork Wings". I had never heard of them before. They were really good. I believe it is part of the shank that is trimmed up. I think the resturant braised them. I immediatly thought about throwing them in the smoker and treating them like ribs. Has anyone had any experience with making them?

i think they are processed pieces kind of like a McRib that bone comes out to clean + aren't they cooked ?
but they taste good

We used to sell these in our shop, we called them "pig wings" they are a trimmed up pork shank. Ours were smoked and were a huge seller but, our cost got to be too high on them from the supplier so we discontinued. Still have people come in asking for them though and it's been over 4 years since we carried them.

They are actually Pork Hawg Wild Wings made by Farmland. They come either precooked or you can buy them raw. Gordon foods used to carry them but quit about a year ago. I can still get them from a restraunt supply store though in Indiana "Mcfarling Foods" Here are a some I've cooked up

I believe you can still special order them from Gordon Foods and have them delivered to your nearest store. At least that's what we did last year. They are a little pricey though.

I have ordered them thru my local butcher. I am paying $4.99 a pound. Don't know if that is good or bad. David, how did you prepare 'em? They look great! I am actually picking some up today.

Flying pigs at last!

I've heard of them before, but still never seen one labeled that way. It's just a way to take cheap meat and make it more marketable and more profitable. Nothing wrong with that, but if they take off real big it could affect the pricing of just regular old shanks.

Ralphy,
I've had them both raw and precooked. The precooked I just stuck in smoker until heated all the way thru, sauced and served. The raw ones which are in the picture I put rub on them and smoked them with some hickory I think 3 to 5 hours. Until they were tender "Been awhile" Put a sauce on them and put them out. I HATE to say it but I kind of thought the precooked were a LITTLE better. Not sure how they cook them but they pretty much fall off the bone when you bite into them. Dam now I'm going to have to go out and buy some! : )
