Pork Butts

Our HEB had Smithfield pork butts for 97¢ lb. last week. Picked up 2 ten pounders. Got 'em rubbed and ready. Got the Performer set up for a snake smoke and will light it off in the AM.

The butts got rubbed last night and the charcoal ring laid around the Vortex ... even loaded the chimney and placed it over the Performer's gas lighter. Lit the thing off at 10:00 this morning and dumped the chimney coals in about 10 minutes later. By 10:15 I had both butts ready to go on.

Temp was about right. On they went.
