plan on doing at least two pork butts for kids graduation party along with some burgers/brats/dogs. What kind of yield or number of sammies do you think I can get from two butts? They will be sam's "2 to the pack" butts, about 15-18 lbs.

Figure 50% yield per uncooked pound. 15 lbs of uncooked meat will yield 7.5 lbs of cooked meat at 1/4 lb per person equals 30 servings. Your servings may be larger, or smaller depending upon the crowd expected.
 
If you have a choice get small buns. The big eaters will have two, small eaters will probably finish their one or at least not throw away a big one. It will be harder to get a 1/4 lbs on them.
Not trying to be a cheapa$$ but I just hate to see people throw away good Q.

What size buns are you using... 4 in., 4 1/2 in. or restaurant size 5 in? 4 1/2 in. is the most common size found in the grocery stores around here. If you use a 4 in., a quarter pound of meat will be ok. If you use a 4 1/2 in., I'd recommend 5 oz. of meat for a nice sammie. We use the 5 in. bun in my joint and we put 6 oz. or more on our sammies. I hate skimpy portions. Pork is a dense and heavy meat. Takes a bit more on a sammie to make a nice one.

Proportions are a matter the eye. I can place a 5 oz portion of meat on a 4 inch bun, and the eye says it's a healthy portion. However, the eye doesn't always do justice to the stomach. Relatively, a six ounce portion to a 5 inch bun says a large amount of already filling meat.


Industry standards are what makes the difference between the backyard cookout vs. making money at what you do.

Do you want the meat all eaten and folks coming back for more? Or, would you want those same people throwing away a third of their sandwich because they are full?
 
Thanks Danny and Vinny. I tottaly agree with you guys for a resteraunt or catering etc.... But the OP is talking about a Graduation party probably self serve. I have seen too much food throw away at pot lucks, graduation partys, holiday parties just my opinion though.
