• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Pork Butt Rub/Inject right before cooking?

Morning all.

It's a beautiful day here in Hawkes Bay and being a day off for me I find my self pondering the more important things in life.....

One of those things is: For Pork Butts should rub be applied and/or injection used in the hours before cooking or right before it goes on the smoker?

Thoughts?
 
I rub and inject while the pit is coming up to temp. No reason at all that's just what I do.
 
For consistency's sake in a competition I rub and inject several hours before. For laziness sake at home, I usually rub and inject the night before. If I'm cooking overnight at home, I'll rub and inject right after cranking the smoker on, and give it 30-60 minutes to sweat.
 
I inject right through the cyro-packaging to save with cleanup, using different angles through the same hole to prevent leaking about 4 hours before cooking. I'll rub an hour or two before smoking depending upon my time constraints. There has been times I rubbed just moments before going into the smoker.

But you have to use what works best for your time frame.
 
It totally depends on what's in your injection, if you have acidity ingredients you may not want more than a few hours of injection time. If your rub has a lot of salt content, you may not want to rub more than a few hours before hand.

I like 4-6 hours on both, but will do it right before hand if needed. Keep good notes and see what works for you, that's the fun part of making your own BBQ.

I find that cryopacked meat often has an odor so I tend to wash it. (I know about the splashing germs thing but I can't do that scent.) Do you notice any taste when you don't wash it?

rub as smoker is getting to temp if you use apple juice there is enzyme that makes pork mushy so if you inject to early you run the risk of mushy pork
