• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Pork Butt Question

Yesterday I went out on a hunt to find a whole brisket which can normally be found at our local Wal-Mart well no luck even at 2 Wal-Mart's so we just got a ham and a pork butt. I peferr a boneless pork butt but they had only 1 left so I was in luck, there is not much fat on the butt, I would like to see more fat on the butt. What suggestion would you have maybe drape it with some bacon or some fatbacks? Or shall I just leave it.

I would just leave it, if it really is a pork butt the fat will be in it. Our Wal-Mart sells enhanced Tyson pork, I have to watch the salt when I use it.
 
Yep, if it is a butt, it should have enough internal fat to keep it lubed while cooking.

Fact is, I trim off any significant external fat from a butt anyway.
If I put rub on fat, it just renders off anyway.
Or, I wind up with spiced up fat which I remove when pulling.

Just my penny's worth. :oops:
