• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

This last week I had a catering job for 200 person picnic. They devoured 80 lbs. of chicken, brisket, and pulled pork!!!! I had nothing left.

Then Randy had a wedding for 400+ on Saturday night. It was a huge success. It took four of us to keep everything full on the lines for the two hours that everyone ate. Its amazing what it takes to do an elegant event like this: the investment, preparation, service, and clean up.

We went through three pans each of pork and brisket for the wedding equal to 60 lbs. of brisket and 40 lbs of pork.

Wow Todd, the set up you have is great, chafing dishes etc... servers...
Food looks great...what was that in pan next to the pulled pork?

The first outdoor picture is my set up. The wedding set up is Randy's. The first full pan is cheesy potatoes. Maybe Randy can come on and share the recipe. His lemonade recipe is really good, too.

Very professional looking set up at both parties, with presentations like these you should have no trouble getting a ton of jobs just by word of mouth...:-D

Thanks for posting the pics for me! (Tech challenged) Really appreciated Todd's help. This was the 6th or 7th wedding cater this summer, so we're starting to get it down. Thanks for the nice compliments!
 
Looks amazing. Must have been a lot of work, though, cause you seem to be sleeping standing up.

My wife, CountryHB and I did an interesting wedding Saturday. It was scheduled up in the mountains, but the fire shutdown the highway and we had to adjust to an alternative location. I was chitting bricks cause I had $400 dollars of prime rib worsey slathered and sitting in Montreal seasoning. Worked out quite well! Almost had a heat stroke though:shock:

Well, a lot of the credit goes to Randy's wife, Sandy. (That's her butt in the picture of the long table. I'm sure she'll appreciate that.) She's the Elegance in Elegant Catering. Randy and I are just pit jockeys. For example, the table cloths are all microfiber. Cost a small fortune, but they clean up very well and don't have to be ironed or professionally cleaned
like cotton linens. Sandy's the one that scouted out all of the serving pieces and center pieces from various home decor and kitchen stores. There's a small fortune in that table before the food is even placed. So, finding nice, durable pieces that don't cost a fortune is really key. What you don't see are the dozen roasters, coolers, and cambros in the kitchen that are required to keep food hot/cold for 400+ people. It took two people full time to keep drinks flowing (that's not even the bar), and four of us to keep the pans full so the line didn't stop. Only once all night did the line stop because we were out of potatoes, but that only lasted 30 seconds as they were already on the way.

I kept thinking of Matt, Amy, Sled, and Pooh serving the 500 a few weeks ago. In some ways, its not as hard as it looks, but that's only if you plan and have the right tools to do the job.
