It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. My #2 Daughter got married last Saturday and while all the kids were in town we had a Pizza party the next Monday night. Here are some pics of some Pizza's I made in the firebox of the Gator. I made five 18" Pizza's but only got pics of three or four. It really worked out great. Enjoy...... PIZZA PARTY

Sorry for tempting you Boss,:-P But no I never thought of cooking the pizza in the main, It's just a lot easier to get the temp in the fire box to 400-450 in a smaller compartment. I would have to use a butt load of lump in the main chamber grill to achieve that temp. It would be nice to cook two pies at once though.

With pizza that looks like that, its a good thing its only one at a time, that way as u finish the first, the second is ready.

Anyway.. throw in log! I cook them in my Klose BYC at 350.. takes a little longer but works great. I use a chimney of lump and then 2 oak logs, With that fuel load, 400 is easy with dampers wide open, but i damper it down a little to get the lower temps.

We got introduced to pizza in the smoker when we competed at Charleston MO last spring. Used the smoke chamber, and put the pizza on a pizza stone. No water in the water pan, and did use wood. Slap your Momma good eats!

Z .. I just went and checked out the pics of your pit again. its nearly the same as my BYC..

If you like the > 400* temps, you can also build a fire in the bottom of your vertical. Damper the direct heat with a broiler pan from your oven, or with a chafing dish placed on the bottom shelf and cook the pies in the Vertical. (Leave the firebox door cracked open with a small fire going.). I did it this way when i first got the BYC and it worked well.. Me personally like doing it around 350 and using the thicker doughs.

That, looks like a GREAT JOB Zilla!

Noticed you have a screen on top of the stone. Is it better than just cooking on the stone once the stone is good and hot?

I gotta get a bigger smoker one of these days................

Hello QCZAR, Well here's the deal. Before I broke my wood pizza peel giving my neice a good hearted shwack one day. My wife pesented me with a metal one. Now the pizza won't slide off like it did with the wood peel. Even when I used corn meal under the crust. So I went to the screen. I strech the dough and place it on the screen and then top it. In to the cooker and afterit sets I remove the screen and finish on the stone while I make the next pie.

get a new wooden peel, and don't abuse the girls with it anymore:grin:

Dam Zilla, you got it goin on. I wasnt planning on lighting up the Dera this wknd but now Im thinking - PIZZA!!!
