Pimpin’ Chicken Enchiladas with Roasted Tomatillo Salsa

Well I have been doing quite a bit of backing in the BGE and this is something new I tried. 1st I smoked the bird in some Achiote Paste and other spices. I also roasted some tomatillos with some onions, jalapeno’s, Serrano’s and some fresh garlic. I assembled and backed in the Lg. Egg. I paired it up with some homemade Mexican black beans, homemade guacamole and some yellow rice.

Great looking meal. It's always nice to see someone take the time to do enchiladas properly, especially since I discovered the lazy way to do them (layered, not rolled).
