• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Had great success with the Q this weekend -- the Butt was the best ever; however, the hit of the day were the appetizers which were a varation on "Pig Candy" that occured to me after seeing the Pig Candy thread. (Apoligies to BBQJoe)

The water chestnuts were dredged in brown sugar, then rolled in half a slice of regular cut bacon and then smoked until the bacon was done. The sweet crunchy center was a great contrast to the salty smokey bacon taste.

I tried out several names on everyone -- but the best one "PigNuts" didn't go over with the wife, so I settled on "Pig Candy Kisses" for the G rating.

Sounds interesting.....and I like the name pignuts btw.

If they can sell christmas kissing balls in winter up here, you should be able to call those pignuts. There is the fruit of a tree called a pignut. Scott

It is a water plant that I buy canned in the chinese food section. A lot of chinese dishes have them. I bet you could even get fresh ones in California, but I never have even seen a fresh one.

Takes about 1 can for each pound of regular sliced bacon cut in half.

What's funny, these have been around for years and I have never heard them called anything other than bacon wrapped water chestnuts. I think Pig Nuts is perfect!!! (besides, pig turds is too close to atomic buffalo turds)

One thing to try out, water chestnuts are really marinade friendly. The standard marinades for this recipe being soy sauce or Worchestershire. Cutting either one with some lemon juice or some cider vinegar wakes up the sweetness of the brown sugar. It only takes 15 or 20 minutes of marinating to do the trick. I have had some that were marinated in Southern Comfort (I think) but I'm not a whiskey drinker, they were so-so.
 
Ive had those at a swanky party at a country club.......dont remember how I got in.....but anyways... they werent smoked of course but still pretty good.
