• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I'm glad you jumped on it Hoo. Looks great. Throw a nice Texas brisket on for me. The pics and smile are thanks enough.

Very nice! Nice hat, too! :D

Is that a stout sitting by the smoker, waiting for me?

That's a mug of a stout that I brewed up probably five years ago. I found it in the back of my pantry yesterday. Stout ages well. It was actually pretty good. I think the ageing improved it. I started a couple more batches earlier this month that should be ready in another month. A nut brown ale and a licorice stout. Mmmmmmmmmmmmm!

Looks great! Now ya gotta start cooking for you, the wife, the neighbors and the brethren. Add a good beer and your deck will never be empty.

Where's the melted pan ?

Nice pit Hoo. You're gonna enjoy it.

You want a picture of the melted pan? You got it. Give me a minute.

Melted Pan

The melted pan. The splotch on the right side is where the aluminum core leaked out when it was molten.

Originally there was a 1/4 inch thick disk of aluminum on the bottom of the pan. It was sandwiched between the pan itself and a thin layer of copper clad stainless that you can see on the bottom. The aluminum melted and leaked out the side. The glob is what is left of it.

Nice rig, Hoo! The hat and stout notwithstanding, Howd's it cook? :D

Way to go Hoo! Nice looking beer!! I love porters and stouts!! You gonna give Redhook a run for their money?? And the cooker looks awesome too!

Your going to love that cooker Hoo. One of my best buds has one just like it and he turns our some excellent Q. Enjoy and share.

Being short of time lately I only had a chance to give it a quick burn on Saturday. I had a CharGriller Pro a while back which is a low end smoker with a similar setup that was very frustrating. This unit came right up to temp and held steady for three hours without much fussing. I over shot the temp at first because it was windy and 55 degrees so I over stoked a little figuring it would need it but it didn't. I'm looking forward to doing my first brisket after things mellow out at work. Should be a walk in the park on this baby. Now to put out some feelers for fruit and nut wood. I have alder and wild cherry on the property. Not sure if the Maple out here is usable. Then there is the Cascarra tree. The bark is a super laxative. Probably not a good idea. My dog's bark is a good laxative too. If you don't know him, it'll scare the s#%t out of you. Back to dreaming about brisket.
