• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

That's what I want for Super Bowl.......

What meat? Deli sliced, chopped? I don't own a slicer. What cheese? What rolls? What seasonings? Saucy or Dry? How You do it.?. :mrgreen:

I'll fry it up on my griddle on my gasser.
 
For the basic Philly I go thinly sliced ribeye (can be a cheaper grade), american cheese and onions. Salt and pepper as seasonings. Good hero/sub roll. Really simple. If you can't slice the ribeye too thin, pulse it up in a food proccessor. I usually slice paper thin but chop up on the griddle so a couple of pulses in the food processor will work.
 
In my mind a texas cheesesteak would be made from smoked brisket chopped on the griddle with grilled onions and peppers. Texas it up with some chilis and maybe a spicy jack cheese.
 
I usually start the onions with some oil on the griddle, get the steak on, season everything with salt and pepper. Once the steak is fully cooked, mix in the cooked onions, shape steak and onion mixture into piles about the size of the bread slap a few pieces of American on (I like some extra). Put the bread over the cheese covered steak to allow it to steam and melt the cheese and then slide the spatula underneath the whole mix, grab the backside of the bread and and flip it over smearing all that deliciousness into the bun.[/ATTACH][/ATTACH][/ATTACH]

Pastrami and brisket with onion and provolone cheese

 
Saute up some onions and mushrooms with a little olive oil. Get them going, then toss on some thin sliced, almost chipped, ribeye onto the pile. As it's cooking, get 2 spatulas and chop the meat and mix everything up.
Once it's all cooked, add your cheese - Provolone is my preference.
Put some mayo on the roll and put that down on top of the meat and cheese - then use the spatula and flip the whole thing over. Add some ketchup and enjoy.
