can pellets be used for flavor on the charcoal of a wsm instead of wood chunks?

Sure, but they burn pretty easily. If you can control the air, you should be okay. If they will ignite when you open the top. Just close everything back down and they'll go back to smoking.

Just wrap them in a double layer of foil then put in one hole with a toothpick. It will last longer. I use them in my electric smoker in a pan when making sausage.

Check out this video. The guy uses a cast iron pot with some pellets to accomplish the same thing you were talking about.

Yeah, they work. But use foil as suggested. they last longer because of less oxygen in the packet.
