• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Pectorial beef for chili

Was in Costco and they had cubed stew meat, it looked pretty good. I asked the meat guy what cut it was from, he said it was a pectorial cut from behind the chuck. How do you think that compares to chuck to use in chili? I'm going to coarse grind it. Doing my first chili cookoff. Thanks in advance.
 
If my one experience is the norm, it cooks up nothing like Chuck roast. I was cooking a bunch of beef for a party, and found beef chuck pectoral from Gordon food service.



It was VERY lean. It cooked more like braised flank or round than Chuck. It didn't have any of the gelatinous quality that Chuck roast had. The meat turned out fine, but nothing like Chuck.
