• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Hey folks! I'll start with saying sorry this is not an outdoor cooking thread! But here is a thread anyways!

In light of my new beef package that came with a few packs of ox tail I decided now was the time to try ox tail stew.

Started off browning the outside of the ox tails in my 12" iron skillet. After I seasoned them with SPOG.

Started off by adding rosemary, Thyme and bay leaves.

One Cup red wine.. This is my favorite to cook beef with! Not a wine drinker.

I went to a party a couple of years ago and a fellow brought this. I would not eat it as I am Leary of some things. I know he put Guinness beer in it. I complemented him on it on how good it was but never touched it LOL.

Curious to know what part you were "Leary" of... I love stews of any kind tho and I don't have reactions to anything that could be in food so I am willing to eat anything that looks good :)
 
Well It's been 4 hours. It doesn't look like there will be any meat coming from these ox tails. Unless something magical happens to them within the next couple hours.. but nothing is pulling from the connective tissues yet on the tails.

So... It might end up being a very flavorful stew but I'm gonna miss my chunks of meat!
 
Do you have that crack pot on low or high. On low it's going to take a lot more than 4 hours to get the meat tender, maybe 8 to 12.

Well I started on low.. but I turned it on high.. I'm letting it rock for a while. I know these things take time to break down so once they start I'll add potato's and carrots and stuff :D
 
Oh that looks good! I need to try tomato based ox tail soup. I've had plenty of asian style ox tail soup and pho but never Western style.
 
I how you're not under the gun time wise because I'd love to think of that meat falling off into that stew. Looks good.

Oh no time rush here :) I've got it screaming on high.. and my potato's and thickener is not going in until ox tails are done. Almost there tho!
 
Alright here we go! Finally pulled the ox tails out.. meat came off.. Got more meat than I expected out of it!

Added the broth mixture back to the meat & veggie mixture..

I don't have a fat separator but I tried the best I could. Will cook on High for 2 hrs or until veggies are tender.. then add a thickener of flour and the meat broth for 30 minutes.

Wow, that looks fantastic. When I was a kid many many years ago my mother would make oxtail stew. It was a protein that a frugal family could afford back then.
 
I made Jamaican oxtail stew just the other day, I usually make it at least once a month. But in a pressure cooker.
If anyone is interested, this is what I use for flavor:
1 green onion
1 scotch bonnet pepper
3 cloves of garlic minced
1 tbl. ginger root
1/2 cup soy sauce
1/2 tsp. pepper/ salt / thyme

that stuff gets a quick fry in the pressure cooker before water goes in

Your stew has just pushed me over the edge.

Here it is.. The final dish.. Looks great! will report on the taste in a bit. Threw in some Hawaiian rolls for dipping in the broth :D

Looks great! I like to do a smoked Jamaican oxtail stew. Takes a while, but it's worth it.
