• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Do any of you guys know anyone else other than old country bbq pits that produces the over under style smoker?
 
Is it safe to assume the over under smoker is better at even temperatures than a standard offset smoker
 
I can't give you a comparison to an offset but my O&U maintains a pretty even temp over the cooking grate left to right. You do want to keep meat off the extreme back of the unit. Cook in the middle and you won't have any problems.

Good point about the back being hotter. I wonder if anyone's fussed with a diffusor plate, etc, or if that's just a natural thing you deal with.
 
One thing I thought about also was would it be worth the extra money going with the over under or sticking with the pecos?
 
I went thru the same thought process, and the Over-Under makes more sense for me, anyways. Even temp, large cooking area, stick burner, good reviews here - all point me to the O&U, not the Pecos.

That's my opinion.
 
Again, just my current opinion - I don't own either one, but will likely get the O&A next season

Not worth the effort. Only time I had an issue is when I had it packed with ribs. The one's in the back center (had the fire in the center) cooked faster.
 
Thanes guys. I have been watching academy sports in hopes they will put them on sale soon so I can feel better about getting one
