Ever have one of those night when you decide tyhat you don't feel like cooking for hours just to make dinner? When just decide to make do with whatever's handy and already thawed out?
Tonight when we got home from the gym, I went rummaging in the fridge and found a brisket point and a coupla baking potatoes and some cheese and started remembering my days in Texas. It would take to long to bake the taters so I just split 'em down the middle an boiled them. Then I sliced and heated the brisket. Whikle that was cooking I whipped up a quick bechamel sauce and added the cheese to make a cheese sauce. I put the ptato halves in a bowl, put the brisket on top and smothered it all in the cheese sauce. Me and MrsMista are rubbing our bellies and it was all done in less than 30 minutes.
