• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

OK..the 'dera is fired up, testing the new Spicewine basket!

The burn is underway. Put in a butt and have a couple of fatties ready to toss in. I'll post some pics in a bit. So far temps holding steady at around 200 with both dampers about 1/2 closed. It's been at 200 for about an hour now.

Rubbed the butt with Spicewines Hen and Hog dust then it sat all night in a apple juice/Bacardi O3 (mandarin, tangerine, and valencia orange flavors) mixture. Sprinkled with a bit more rub then in it went. Plan to use some Head Country original sauce with it.
 
Maybe I misunderstand using the basket but I don't think you want the top damper closed any more than 1/4. Anyone?
 
I can't speak for a basket, since I don't have one. Depending on conditions I've closed mine down more than a 1/4. I do have to pay more attention the fire though. If the wind, and wood aren't right I'll take the conservative route. I watch the fire, the smoke, the meat, and the clock.

I leave the top open and use the bottom for control.
 
It worked fantastic for me. Temp settled about 220 and stayed for 4 hours. Total burn time for both sides of the basket was a little over 5 hours. Temp outside was a little over 80 with little to no wind. I just dumped about 1/2 a stack of charcoal in one side to finish it off. It's looking real good!!!

The first basket test was a total success!!!!!!!! Thanks Spicewine!!
 
It turned out awesome. One of the best smoke rings I have seen yet. As soon as I get my camera back I will post them. I left it at my parents house last night. I took everything I made and my Mom made a pork roast in the crock pot. Mine was jucier then hers!! And tasted great to boot! Even the wife liked it. The fatties were gone ASAP (except for the few pieces I stashed for todays lunch).

Tasted Super. That is a combo I will use again. I used Maple wood chunks this time. Great combo for the pork.
