I spent this afternoon doing the inaugural cook on my Oklahoma Joe Highland offset. Started the fire with a chimney of lump, and burned apple splits for the duration of the cook. Today's menu was chicken hind quarters and some supermarket jalapeno/cheddar smoked pork sausages.
I jury-rigged a baffle out of the bottom of an old roasting pan, but I'd like to replace it with something better soon. It took a while to get TBS and I suspect the roasting pan was inhibiting the airflow somewhat. I would like to try a smaller baffle or convection plate with a smaller fire. I can tell you that the temps were better end to end with the roasting pan, but hard to tell exactly, as the thermo that came with the pit is next to useless. I haven't checked it in boiling water yet. I tend to trust the Horizon thermo I bought to fill the extra port built into the lid.
Overall I had a great afternoon - tending the fire, mowing the lawn, sipping a cool one and listening to some classic blues.
Oh - and eating some fine grub too, if I do say so myself. The chicken was moist and delicious, the sausages could have benefitted from a bit hotter fire. Sides were collard and oven-cooked yam fries.
