• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

just pulled a half slab of beef ribs off. Im smoking a turkey, a butt, and beef ribs. Took em off added some awesome sauce i bought. Evans original I think. I think I had an accident in my pants. DAMN that was good.
On the flip side this will be the last cook with my ecb. Did mods and runs way too hot. Then covered all mods with foil cause i needs my q.
Gotta get my wsm for next weekend!

And, if I may ask, what "mods" did we do to the ECB?? My ECB bullet (Gormet) uses more charcoal that a WSM but it hasn't had any "mods" --please, elaborate!

i noticed that the ash eventually somthers itself so i added holes in the bottom of the ash pan and made a little rack 2 inches above the bottom of it. (equivelent of adding a grate like wsm)
i thought that too about the too much fuel thing. I tested it last night with 3/4 unlit and 1/4 lit on top way up to 450 within 25 min.
Tried with a small amount a little less hat but when it cooled down not much coals left to add to. TOO MUCH air. Anyway i fixed it. For now.
 
Oh, ok. I understand - I haven't messed with the air slots on my Gourmet model ECB. The slots do pretty well - I understand the several of the other models had to be modified due to some idiots dropping hot coals on their decks so Brinkmann modified the bottoms of the rigs so they won't draw.

When I go several hours cooking (like at least a second full load of charcoal) I will take the ash pan our (using the infamous blue welders gloves :D) and shake the ash out before reloading. Now, I'm sure Brinkmann and any other normal person wouldn't recommend picking up a pan full of burning charcoal to clear the ashes but my redneck side comes in to play with challenges like this. :mrgreen:

Oh, by the way, I wasn't knocking you getting the WSM -- great cooker and good value. Everyone I know that has one loves it - I use my ECB a lot when only cooking one butt or such. I may have to get a WSM next time I have a spare $150-200 :D

I use my offset when I'm cooking more items or want to keep the ribs in full racks :D or when I just want to mess with the fire more and use mostly oak. With the ECB it's mostly Kingsford and some oak chunks.
 
there is a smoke n pit pro in the paper today in boca for 75 used. I am temped to call.
 
Since its your last cook on ECB (I dont see how thats possible. Your ECB will become your portable cooker like mine. Going to the outlaws? Strap the ECBandito onto the top of the van. I'm out in the driveway farking with Bandito while everyone else deals with the inlaws. But I digress.

What you have is what I call the Swiss Cheese Mod. 450 in 25 minutes with 1/4 lit means to me that you got WAY to much circulation.

Unless you really want to say good by for good, it might be worth the $13 (shipping included) to go to Brinkmann web site and get a replacement. The shelf is a good idea, but the holes make it too much.

10# Kingsford. Is that what your using? That is all ECB needs for like a 9 hour cook.

Towards the end, you'll need a hair dryer mod to keep the final temps up.

I actually am thinking of replacing my ECB with a new one. Just so the van doesnt reek when going to Indy (all my supplies fit right inside. Its an awesome portable)

I agree with Bro. Bill. You will still want to use the ECB. They are just too handy, esp. as a portable.

And in the words of Bro. Dave, don't forget to "dance with the one that brung ya." The ECB is a faithfull friend.

well the reason i did the mods is because i was getting to the end of the ecb anyway. Startin' to rust big time. In laws are gone. Im moving foreward and not lookin back!

I've got the BBQ FAQ that he references on his site (it came with my Weber kettle which was a wedding gift last year)... and I'd read the section about mod'ing in the ECB, but so far all I'd done was drill a few extra holes in the bottom of the firepan, but seeing how he did the mod'ing will really help when I go to do the same thing to mine!
