• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

i love those blue diamond smokehouse almonds. that seasoning is killer. im thinking they smoke the seasoning is the secret. if im correct, any idea what wood they use?
 
Look up Neil's Nuts on this site. The best smoked almonds ever.

And yes, they use a seasoning, possibly a smoked salt or smoked pepper to get that flavor.

sounds enticing but theres 3 ingredients there i dont normally have. not sure i want to buy them just for the recipe unless you are sure these are that good.
 
Should be around 30 bucks to make.. Don't let those 3 cheap missing ingredients in the grand scheme of things deter you from a taste of Neils Nutts. I'm glad you started this thread and landarc was right here as usual hooking his fellow Brethren up :)

I can't do soy but my wife will surely enjoy N3ilsNuts

I damn near ate my weight in Neil's Nuts (no small feat) at the NorCal Bash this past weekend.
Very much worth it!

1-3lb. bag raw almonds
1/8 cup Dale's Sauce
1/8 cup Soy Sauce
1/8 cup Louisiana Hot Sauce
1 TBSP Yoshida's Gourmet Sauce
1 TBSP Worcestershire Sauce
1 TBSP Hot Pepper Vinegar*

Mix all the above together in a large bowl till almonds are thoroughly covered and wet. Shake on some granulated garlic or garlic powder, cayene pepper, and salt and mix somer more till almonds are coated. Dump almonds into a "grill wok" and place in smoker. Stir every 1/2 hour to 45 minutes till almonds are dry. For a doneness test I take out a couple of almonds and let them cool approximately ten minutes. If they are still a little moist inside leave them on longer. If they have good crunch, they are done. Usually takes 2 1/2 - 3 hours. Top of grill wok should be 2"-3" below bandera chimney.

*Hot Pepper Vinegar is a homemade concoction of small hot chile's stuffed into a vinegar bottle than filled with white distilled vinegar.

Don't worry about those three ingredients, buy them. Holiday season is coming, you'll be wanting to give Neil's Nuts to everyone

I LUV 'em too, cain't get enough of 'em, right up there with pecan-smoked crunchy Cheetos.

i will definitely try neils nuts recipe.

not sure why i didnt do this sooner but i looked on the ingredients list and it says hickory. never used hickory before in smoking but i will now
 
Hickory is, in a lot of ways, the flavor of Southern BBQ. I highly recommend trying smoking meats with some hickory as well.
