• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Good day all! I had heard about a method for more rapidly breaking down cooked chicken for making chicken salad: Use your KitchenAid.

Gave it a shot and it works!

Process:
Cut already cooked chicken into large chunks.
Drop chicken into stand mixer with the paddle attachment.
Start mixer on low and then ramp up, being careful not to go so fast that the chicken flies out of the bowl.

Once the chicken is at the desired size, add the rest of the ingredients (in this case, I added 4 stalks of diced celery; ~ 1 cup of mayo; ~ 1/2 teaspoon of garlic powder; ~ 1/2 teaspoon of Complete Seasoning by Badia; ~ 1 teaspoon of onion powder; ~ 1.5 tablespoon of dried parsley to ~ 5 chicken cooked breasts and mixed).

Easy peasy!

I buy rotisserie chickens, and strip the meat while still hot, then cool the shredded meat down. I add the carcass(s) and bones to my stock pot. About an hour later I make chicken salad.
 
Costco pack of chopped chicken is the easiest.
Why have a 7:25 video for something that can be shown in less than 2:00?
