So I get this brisket to smoke for my inlaws. A house guest was expected for Friday and they asked me to cook something. Grand. So i cooked a butt and a brisket yesterday. Ate the butt last night and threw the brisket in the fridge for morrow.
My favorite way to reheat meat is to stick it in a pot of boiling water, cryo-vac'd in a bag or something close to that. Well the brisket was farkin huge and I used a pot that had a pretty thin bottom and I also coulnd fit the brisket into my vacuum bags so I just had it in a huge zip lock. I've boiled zip locks plenty of times.
Inlaws show up and I make a joke about making boiled beef. I look in the pot and the water is black... the bottom of my bag farkin melted!!!!
I freaked out. 13 hours on the smoker, my thermo slid into that meat like butter and I'm boiling out the damn FLAVOR!?!?!?!?!?!
It must not of been free to long, cause much of the bark still had a crispness to it. It wasn't as good as my Durango brisket, exact same rub and cook times. Water.
