• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I figured while I was waiting for the paint dry on the new beast, I would cook up a rack of ribs. I wanted to try out a new recipe, a new sauce and crank up the heat a bit....without wrapping.

The iCube got up to temp fairly fast considering it was single digits last night here, a bout 30min. I cooked at 275-300 today, no wrap, 2 hour cook! The last 15 min i put on some Yes Dear sauce and they are resting now :)

I went to check on them at the 1 hour mark and already had pullback..Cant believe how fast they cooked, and they look awesome :biggrin1:

Great looking bones! I have ribs in the freezer I considering thawing out! Been to farkin cold!
 
Thanks, gamblerpro1 stopped by to shoot the sh*t for a bit and he got to try some :)

Recipe turned out real good, more of a Texas peppery taste vs the KC style I have been doing.
 
I love the look of all the bone juice caramelized at the tip of the bones. No wrap ribs are on my list as "the next frontier"!
