• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Ah,,a day on the Atlantic catching food is nice enough but eating it is even better.

a friend called and needed a pilot for his lobster boat today.

He not only pull's traps but dives for them also.

So i get some fresh seafood out of a good day on the water :)

on the way back we docked and he gave his uncle a bunch of bug's and got a

bunch of steamers in return.

His uncle is a commercial clam'er..

I end up with about ten lb's of lobster and five lb's of steamer clam's..

You got the trump card

Seafood is one of the only ways to trump BBQ on a weekend cookout!

A couple of cooking notes i should have included.
of course steam the clams until they "just" open,save the water.
using a cheap beer will make for a sweeter and flavored clam.dont save the beer.

With the saved clam water add enuf water to make sure to have 15 min of boil time.
make sure the lobster dont touch the water,they are steamed not boiled.
the two in the pic took about 12 min to cook.
they are done when the carapace separates from the tail shell.
boiled lobster is a misnomer..

now taste the water when it cools,,if you like it strain it and reduce or leave as is and save to use in another dish.

Wonder full to make chowder with or a sauce to top fish.

If you want more take the shells minus the brain and the liver and any nasty stuff and cover with enough water to barely cover the shells and lightly boil for about 1/2 hr.
strain and you have some good broth.
 
That brings back some fond memories of my childhood growing up on the coast of Maine and New Hampshire. We had lobsta and steamahs at least once a month when we were growing up. There is no better food on earth. A little melted butter and a little lemon and we were in food heaven.

OK it was a lot of butter! :icon_smile_tongue::icon_smile_tongue::biggrin1:
 
As i left this thread without a finished pic i had to cook some more to show the finished product.

The larger ones are boys and the smaller ones girls.

the separation of the carapace from the tail shell is more evident on the larger ones because of the way they are laid out.

see the arrows.

once there is separation they are done,,no boiling for 20 min a lb ,,only steam until the separation,,you have to pull one out to check but that's no problem..

these four took 12 min to cook on an outside burner,,no loss of boil when dropped in as it's like 130K btu's.

indoors on a stove top,,your screwed..

with the exoskeleton the meat closest to the bone cooks first,,then water temp drops,,wait until water makes steam again,,the outermost meat get's over cooked.

outside burner as pictured is the only way to steam them..

maybe in a week or so when i want bug's again i will take pix of my OL's son,,the seafood chef making baked stuffed on the grill :)

Man, I'd toss bbq in a second for that! And I think I'd toss the bugs in a second to hit those clams really hard! And thanks for the info on steaming. I've only ever boiled lobster.
 
Always loved coming to NH when I worked around Nascar for some of that New England sea food.

Oh,,i only do that once in awhile to help him out when nobody else is around..

he usually gets me crab and flounder too.

i only have to ask when he goes out to get me flounder and crab then drive to his house and pick it up.

the same with the clam's,,ask and if he has extra go and pick them up.

oysters i have to go scrape them up myself,,good oyster bed about 8 miles away..

With the Lobster i know the son of the owner of a distribution wholesale center.

i can get all i want delivered free,,brought right to my house :)

the hard one for me is the Haddock,,have to drive ten miles to the processor,,,at $3.50 lb i usually get a couple pounds of boneless skinless fillets.

love my Q,,and when i can i use smoke and wood heat with the seafood ,,when i can :)
