• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Just dropped by my butcher's shop to pick up my stuff for tomorrow and I could not believe it. He came through with an extra package (3 racks) of BBs because I have been, and I quote, "a very good customer". Que is touched. So I think on Wed, I am gonna return a couple of racks in an altered state that he can enjoy. Nice guy that butcher.
 
Yea you right. I'm so tickled to have a local butcher and so tired of case packed meat in the supermarket chains. This guy knows the size I like, he knows that I wont accept shiners, he removes the membrane, trims the tops and washes them for me. And he thinks that I am doing him a favor. Imagine that.
 
I can relate. I take care of my local brewer. Way to go QueBall
 
Yes I admit it. I remove the membrane. Next weekend I may do a side by side; some with some without and see what my fans think. Thats if I can get both of them to come by.

I just slash the membrane twice and never have trubs with it. I need a good butcher, though. I'm feeling like Phil: I don't see meat that's not in a cryovac!
 
Went to Panama City today to pick up Brisket. Distributer had 2 cases for me to cherry pick--QUALITY Choice.
The 2 "babies" were 12.2 and 14.5 #. Next smallest was 19#, 1 oz :lol:
Rest were in "low 20s" :twisted:
That 19# was evenly marbled and as flexible as could be. No signs of being off an old cow, just a HUGE one!

So, all three in the ageing frig :lol:

The problem that I had, of course, is that I ruined everything that I tried to cook on the fourth.
