New Years Double Smoked

Had a nice New Years Day smoking a Ready to Eat Ham with some cherry and pecan chunks. Smoked at about 250-270 to an IT of 140. Used a Root Beer injection and a brown sugar glaze. Delicious with some black eyed peas, smothered cabbage and cornbread muffins.

I like the root beer, adds a little sweetness. I also pour some over the ham prior to smoking. I think next time I will inject a little more, maybe do it earlier and let it sit.
