I discovered this cut of pork that I have never heard of on another forum that has nothing to do with BBQ or cooking. Now I have heard the old expression used by the meatpackers that the only thing they do not harvest from a butchered hog is the squeal. I guess this proves that old expression is true. I have several questions about this. How long would you last on the floor as the person whose job it is to harvest these and then invert them? This product states they are boneless. Does this mean there is a bone-in variety of the product? If there is, what bone is it? Last question, other than possibly using these for sausage making, what other recipes are there for these?
