• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

New Shirley Gets Here Tomorrow/Couple Questions

My new Shirley get's here tomorrow, originally was flying down last week on Friday and the two feet of snow we got canceled that so had to use u ship and it gets here tomorrow. With that said I have a few questions going from my XL Egg to the Shirley.

1. Seems like the consensus is to use pam all over the inside and get it going for about an hour or so to season. My question is do I need to spray inside and outside on the main chamber and firebox. And how long and what temp should I take it up to.

2. When doing a small cook(its a 24x55) is it better to cook on the bottom or top grate, has two grates not three. Im guessing towards the middle would be best. Just not sure which level will produce the best smoke to heat factor

3. Should I put a cover on it when not in use. Will cook once a week on weekends or every other week on the weekend

Don't coat the the outside in oil. Just the interior. Go light with the spray, or it will just run down the outside. Start your temp low and just keep bringing your temp slowly up till you hit 300ish and let it run there for an hour or so. Once it stops smoking like crazy, you should be pretty well seasoned.

I prefer the top grate somewhere in the middle, to right under the stack, but thats just me. As you use your smoker, you'll find your sweet spot..

A cover never hurt anyone.. It will survive uncovered, but will probably stay nice longer if you cover it. If you leave it uncovered, make sure you close the stack between uses...

1 - I used Pam. I sprayed a light coat over the entire interior of the cook chamber, warmer and firebox. Be careful if you have dampers to not over spray. You will have Pam leaking out the holes (Shagdog's recommendation). Keep a rag handy as you get her up to temp to wipe up drips. If you don't wipe them up, they will mark the outside. I'm pretty sure took mine up to 350 for a few hours, then I threw on a few fatties and a chicken just below the stack on the top shelf.

I also sprayed the warmer and built a fire there as well.

2 - Position depends on what you are cooking. I cook butts and brisket on the lower shelf closer to the firebox. I cooked chicken (Shagdog's recommendation) just under the stack.

3 - If it sits outside, get a cover. I had Paul's neighbor make me a cover which I need to get a picture of and post. But mine has been living in the garage since I got it.

4 - It sounds like a great idea to put wood on top to help warm it before tossing a split in the firebox. This just scratches the top surface. :tsk: Don't do that.

For which rack to cook on you just have to play around. On my previous 24x60 the top left (away from the stack) would be the hottest part, but I loved cooking big meats there at 300-350 to get them done fast. Just normally would do one rotate. Then just right of that would be a little cooler and would put other stuff. Top left was also to get it hot and cook wings. Just play around and see what you like.

My new one will be way different in size so I'll have to learn it too. Have fun!
 
i seem to get better bark on the middle and top racks but i have 4 racks so on yours the top rack would be where i am cooking.

I sprayed the firebox cause I had extra Pam. And, I have the searing station. So I just sprayed all of it. Figured it couldn't hurt.
 
sounds like you have to get a bunch of thermometers and place then thru out and draw you a diagram W/ temps
 
Good luck with the new cooker. Looking forward to seeing pics of it smoking away!
 
Biscuit test should help find any cold or hot spots.

I'm guessing Terry Casper picked your cooker up yesterday?

Funniest thing is I know him very well. He is a very close friend of my Wife's father. Great guy you have bringing your trailer. He was there yesterday talking about how he knew a guy getting a fancy smoker. Tyler was saying he could have saved a bunch of money going through him. Well they talk somemore and realize it's me!! I got a call from him after and the goober didn't even take any pictures of mine and send them!! (I'm picking mine up Sunday)
 
That's right, He and his wife have been great so far. They are about and hour away right now. I really wanted to go down but the snow canceled my flights last Friday.

When they were talking (tyler and terry), Tyler was saying he could have saved ME a bunch of money building a pit... then they figured out he WAS building MY pit.

Just one of those small world things.
