Hi all! I'm new to this forum and wanted to say hi. I've been smoking BBQ with my dad for over 30 years. About 10 years ago I had to make the hard decision to finally admit that his BBQ wasn't very good even if it was still better than a lot of BBQ joints near us. I did a bunch of research and decided to build a UDS. These things are the ultimate anti Yeti! I have about $150 in it and it puts out some of the best Q I've ever had. Dad never wanted to over cook the meat. He didn't understand the rendering of the fat. After eating the first BBQ off my drum, he said, from now on, you're in charge of the cooking. I lost him a little less than a year ago, but there is never a cook that takes place that I don't think about him. Looking forward to being a member of this board and sharing cooks and advice!
