• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Howdy Guys,

I am a new member here in Arlington, TX; I'm a local.
Got a 22" Weber with the Smoke N Sear that I have been using for what feels like the last several years.
The attached pics are the meat I made on the Weber.

Been following offsets for the last several years but very little practical experience.
Took the plunge and I will have a 20x40 offset in a few weeks Gator 1845.
It was kind of a windy road to get the pit. the pit it I was supposed to buy from a friend fell through when his wife saw the cost of a new pit to replace the Lang he wanted to sell me.

I am definitely excited to get into smoking with an offset. I have been watching the initial burn in, pit maintenance, and fire management video's.
I am also a lifelong (+25 years) home cook so happy to chat with anyone on cooking outside of straight up smoking as well.

Hey Hotch, thanks for the welcome! I see you have a R&V deep fryer. How do you like it? I have thought about adding one of those to my growing collection. My thoughts are for traditional Wings and generally not making my house smell like a fry shop. How is the recovery time on those?

I've had it for years and like it a lot. With the volume of oil, you don't lose much temp.
Lately we have not used it much as it is just Shelly and I and we don't deep fry a lot anymore.
Fact is I'm thinking of selling it. 4 Gallon, 2 baskets and stand.

Welocme, looks like you know your way around cooking outside, the offset should not be too difficult to get dialed in. The most important aspect with which you may not have experience is the type of fire management needed in the offset. However, your experience in the live fire grill will be a lot of help. Nothing is as valuable as hands on experience. Great you are here!
