I've been here for a couple of days and I've already got a wealth of info. I've doing serious grilling for many years...on gas. I'm a Financial Analyst by day, but I use cooking and baking as my release. My theme has been putting new, gourmet twists on the food everyone already loves to eat. My mantra is: If you can't pronounce it, can't spell it, or can't figure out how to eat it, then it doesn't belong on a plate that I'll serve. I love doing high end stuff with food and having thought to excellent presentation, and while I do love to look at artistic food, it's not what makes my mouth water.
I've been smoking for some time on the gas grill. It has a smoker box and I've made a number of my own. I've had somewhat good results, but nothing comparable of what you can create using the right equipment, techniques, and attitude.
I stumbled upon this webiste doing research on what smoker to get. I've changed my mind about 50 times already, but do think I've finally honed in on the winner thanks to some suggestion from this group. I emailed Horizon for some information. They appear to have very comparable smokers to the Brinkmann Stillwater LTD that I was leaning towards.
Either which way, I should actually be smoking soon as opposed to talking about it. Thanks guys. You've already made me feel welcome and I hope I can contribute to the board.
PS - on my first post I think, I attached a ZIP file of a rub spreadsheet. Some of the folks who already saw it, thought it was useful so you may want to take a look. I'm also working on a revised spreadsheet that will alllow automatic recipe doubling in addition to a sauce section. I'll try to work on that this week and post it up.
