Howdy from Baltimore, folks!
I'm new to this site, but I've been Q'en for about 3 years. My first toy was a Brinkman(that's not a cuss word on this site is it?) in-line smoker. My first "experiment" was a 4 pound brisket with store-bought rub. Wow, I was hooked on "Low and Slow." Thanksgiving turkey has never been the same!
You're gonna hate me for this one. I got my Bandera on an end of season clearance at my local Wal-Mart a year and a half ago for $99.95, already assembled! The first time I used it, I had to use A LOT of fuel just to keep the temp at 250. Fortunately, I stumbled onto the Bandera site on Yahoo. I lurked around the previous Bandera site last year and picked up info on many of the mods. I made a baffle, and use fire bricks in the chamber.
What a difference! I also use a Polder thermometer with dual sensor to monitor meat AND chamber temp.
Thanks a lot for this site, and the great information. As I get time, I hope to install other mods.
