• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

My in laws have asked me to smoke a turkey for Saturday's get together. Don't want to disappoint and I've never smoked a turkey before. Not looking for a wild recipe, just something that will produce some solid results. All tips would be appreciated. I will be smoking it in a vertical smoke using propane if that matters.

You have many options. For my first turkey I would rub well with salt the night before. (about a TBS per 5 pounds) Leave it in the fridge overnight uncovered. Make an herb butter compound (lots of options ...google it). Rub it all over, (and under the skin). Cook indirect around 325 degrees until your breast is around 165 and the thigh meat it 170. (helps to be able to give the lower part of the bird a little more direct heat which typically happens by default depending on where your heat source is.

Pattio Daddio has a great brine and there is a link to it on one of the threads here If the bird has been enhanced used less salt in the brine Cook at 325-350 or it may take on too much smoke and taste bad About an hour before the cook put gallon zip lock freezer bags with ice on each breast This drops the temp of the white meat so it will be done the same time as the dark meat You can go to the Naked Whiz site,click ceramic cookers, click recipes and look under poultry and click on Mad Max- gives a pretty good tutorial You can also google Turkey Brine 101 Smokin Okie has a great read on doing a Turkey He is a Brethren on this site too
