• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

 Please point me to where the tread is on how to keep the temperature low so I can really enjoy my smoker. I have had problems keeping the temperature down I use spray bottles to keep the fire down in the side box and shut down the chiminey.

Marty,

Welcome !! Please take a few second to introduce yourself in the Cattle Call section....

Regarding fire control, it may be helpful if you provided some info here as to what type of cooker you are working with.

See this link from the Roadmap regarding Fire Control

Fire Control: Excellent basic fire info especially for those who have never fired up an offset smoker or have and struggled.

You may also want to read through the Bandera 101 document from the Brethren home page or do some searches when you have a minutes for key words like " temp control".

Without knowing what you are working with, my two suggestions would be to use less fuel (wood, charcoal) and/or cut back on the air flow into the firebox.

Good Luck !

Ideally, you want a fire that retains the temp you want, with your vents wide open. Control temp with fire size, not by the dampers. so, without knowing which cooker you got. use less fuel... smaller fire.

What they said.

The more info you can provide the better assistance we'll be able to provide. What cooker you use, what if any mods you have made, fuel you're using etc. The means by which you're measuring pit temp is good to know also as most factory therms are notoriously inaccurate.

Fill in some blanks for us and we'll be glad to do the same for you:wink:
