• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Here is my version of Chuds Texas Style Porchetta. Had a 1/3 piece of a whole skinless pork belly in the freezer so I knew I had to try Chuds version. Pretty much followed the recipe less the pink salt. Also I wanted more of a spiral so I butterflied the small piece I had. PXL_20250504_182014687.jpg
 
Looks like it's off to a great start! I'm pretty sure I've asked this before, but what's a Chud?
 
I'll go with your version because I don't watch Chud. It looks like a winner!

The wait is over. Came out really tasty 😋
If I make it again it will be with a bigger piece of pork belly and for my taste I will amp up the fennel seed. As you can see this was one lean belly, I didn't trim any fat. Happy I could share this cook with you all, it's been awhile since I posted a cook.

I don't trim belly either. Matter of fact I don't trim much of anything. Coincidentally I've got some pork belly going on the opposite of yer cooker...the Santa Maria. Late start but I've been busy.
